When Dave Gunawan decided to open a wine bar next door to his popular South Granville restaurant Farmer’s Apprentice, his goal was simple: to create a space for his team to learn about natural wine, a product he himself was fascinated by.
“Natural wine is an exploding trend,” says Dave. He points to artisanal winemaking’s current renaissance, the health consequences of chemicals in non-organic wines, and the environmental impacts of traditional wineries as a few of the factors contributing to the craze. “There are dozens of additives, fertilizers and preservatives in traditional wine making, which often relate to allergies,” explains Dave.
Enter Grapes & Soda: Vancouver’s first-ever natural wine bar, and a brilliant one, at that; compact, glittering jewel of a bar where dark wood tables spill over with guests ooh’ing and ah’ing over organic wines recommended by knowledgeable servers. Dave's trademark and delicious farm-to-table snack plates are a draw, too, of course.
Grapes and Soda, the spirit-focused sister spot to the award-winning Farmer’s Apprentice, is where you’ll find the ultimate cure to Raincouver’s damp winter season. Order up a Dante’s Handshake and prepare to be amazed with a tableside demonstration of flaming mixology. A sweet mix of Caribbean rums, salty caramel syrup, Amontillado sherry and a hint of peat, this novel cocktail is literally set ablaze and then poured between two copper pots in a stream of fiery blue liquid. The theatrical presentation alone makes this one of the hottest cocktails in town.
Known for its dedication to organic, naturalist wines, this pint-sized wine bar in Fairview attracts experienced oenophiles with its curated wine list and seasonal sharing plates. When it comes to rosé, there are two European bottles behind the bar: La Pythie, a Grenache/Merlot from Les Deux Terres in France’s Ardèche region (also available by the glass); and a Sicilian Frank Cornelissen Susucaru (a Nerello Mascalese blend). Your best bet is to visit during the daily Happy Hour (5:00 to 6:30 pm) to enjoy discounted bites and boards and select wines by the glass for $7.
